"Snake River Farms is super legit. They're one of the few companies in the US that have American wagyu. They imported their wagyu line from Japan in the seventies or eighties and have been breeding this wagyu line since then.
If you buy Whole Foods' best ribeye, it's probably going to cost you $20 a pound. But if you buy the best ribeye from Snake River, it's going to be $60 to $70 per pound. The pricing difference and what people are willing to pay for really high-quality meat is massive.
This hasn't made its way into retailers or butchers yet. I think there's a massive opportunity to build what I'm calling the Blue Bottle of the modern butcher shop - catering to people who really care about sourcing, flavor, cut, dry age, all these things you're not going to be able to get at Whole Foods.
I imagine Snake River Farms is probably in the 200-300 million in revenue range. They're vertically integrated and have been doing this for a long time. They're shipping on dry ice all over the country."
