"I read Tillman Fertitta's biography where he explained his philosophy. It was around 11:30 at one of his restaurants and someone ordered an omelet. The rule was breakfast ends at 11 or 10:30, and they turned the customer down.
When Fertitta heard about this, he said 'The eggs are right there - just say I'm gonna go scramble you some eggs, I got you, let me take care of it.' It demonstrated his philosophy of following rules versus treating someone like a human. It's about treating customers like you own a corner bodega and you see the same people every day, saying 'Oh you want the usual? I got you.'"
